We are now looking for a German speaking restaurant manager with a passion for hosting and great guest experiences.

Duties and responsibilities

  • Responsible for serving exciting concepts such as Fine dining, afternoon tea, suite service, surrounding areas, self-service station, and everything F&B related to courses and conferences
  • Responsible for cleaning and hygiene, cleaning plans, established procedures and instructions for all areas of responsibility
  • Responsible for ensuring that the level of service towards guests is complied with by the passenger crew, including proper serving, uniform and treatment of passengers
  • Responsible for serving breakfast, lunch and dinner in their areas of responsibility
  • Responsible for holding staff meeting at least one time per shift. Minutes of the meeting are delivered to the F&B manager on board.
  • Ensure that the liquor licence and the Alcohol Act are complied with
  • In cooperation with the warehouse manager, responsible for the withdrawal and sale of all sales goods in the area of responsibility
  • Co-responsible for supervision and maintenance of equipment in the area of responsibility
  • Cashier and staff training under area of responsibility
  • Inform superiors of deviations so that this can be handled by the hotel manager
  • Responsible for ensuring that the ship's operational and safety management systems, including internal control food routines, are followed up within your area of responsibility
  • Responsible for following scheduled shift/work lists for the period, with the authority to order overtime for passenger staff as needed
  • Personnel responsibility
  • During operational interruptions participate in incidental work
  • Motivate and develop the crew within service and additional sales, including training of new employees
  • Implement standard operating procedures within their own area
  • Responsible for ensuring that instructions in the passenger manual and warehouse management system are followed. Report all irregularities and take preventive action
  • Ensure that working and rest time regulations are followed
  • Set up shift and working time lists for your area of responsibility in cooperation with the F&B manager

Qualifications/Experience

  • Certificate of apprenticeship in restaurant is preferred
  • Good expertise in F&B and restaurant operations
  • Good commercial understanding
  • Good knowledge of German and English, advantage of Scandinavian language
  • Hurtigruten set high demands for safety on board, which means that all employees must have; Basic safety course for seafarers, Crowd and Crises course, and approved health certificate from authorized seafarer doctor. There is no requirement to have completed the courses before applying, but you must be willing to take them, and please note that the individual must pay for the courses themselves.
