About the position

Hotel Riviera Are Looing for Our New Executive Head Chef Hotel Riviera, located at Verket in Moss, in a brand-new district emerging from old industrial sites, is seeking a new Executive Head Chef. We opened our doors in May 2023.

Riviera signifies where the sea meets the land, and Hotel Riviera sits right on the waterfront. We're building a new city beach, park area, and the Moss river flows past the hotel. Drawing inspiration from various Rivieras around the world, we're crafting a unique destination. "It's not just a place, it's a feeling."

At the heart of Hotel Riviera is our Social Club, where we redefine traditional meeting spaces into impressive chambre séparées. On the top floor, our 14th-floor indoor and outdoor pool area awaits, complete with saunas, cold plunges, and a magical ambiance.

In our other Food & Beverage venues, our guests can enjoy our Beach Club, Brasserie Bon Vivant, Bar & Patio served from our two bars and open kitchens. With the sea at our doorstep, seafood naturally features prominently on our menu.

We are now seeking a new Executive Head Chef to contribute to the ongoing development of the most vibrant and lively restaurant houses the coast has ever seen. We are searching for one of the most critical roles in the hotel – a leader for kitchen operations – overseeing all its food offerings.

Our Executive Chef will be responsible for:

  • Ensuring production and service quality, menu creation, and food quality
  • Staffing and scheduling
  • Daily kitchen operations and continuous development, including à la carte, lunch, breakfast, meetings, events, and celebrations
  • Training, coaching, and personnel management of kitchen staff
  • Inventory control, forecasting, purchasing, stocktaking, and food cost management
  • Maintaining strong supplier relationships, procurement, and logistics, as well as inventory and systems
  • Menu and concept development
  • Planning events in collaboration with the rest of the hotel team
  • Food safety and HACCP standards
  • Establishing and maintaining strong operational procedures with manuals and checklists – laying the groundwork for a world-class work culture and kitchen structure
  • Actively working to reduce food waste

What do we expect from you?

We are looking for a competent and experienced leader with a preference for candidates with experience in hotel operations.

  • You are mature and confident in leading a team, a good motivator with strong communication skills – both verbal and written, in Scandinavian OR English.
  • You take pride in your craft, possess strong culinary skills, and thrive in a busy environment where you assume responsibility.
  • You have extensive experience in both practical kitchen operations and administration.
  • We seek a Head Chef who enjoys being hands-on and present in the kitchen during busy times. Naturally, you are results-oriented and find it exciting to deliver on both food and labor costs.

At Hotel Riviera, we aim to create exceptional dining experiences, drawing inspiration from various corners of the world for our menus. Additionally, we prioritize locally sourced and organic food, and you enjoy building strong networks with suppliers and producers. However, your most important supplier is undoubtedly the sea, located just 50 meters from your kitchen. This position is part of the hotel's management team and reports to the hotel director.
